Celebrating food produced locally by farmers and artisans, Sustainable Kitchen shines a spotlight on seasonal food featured on the menus of Chicago restaurants. Blessed with a vibrant and diverse restaurant scene, Chicago is home to America’s premiere chefs who wish to inspire the community to support local producers by serving dishes emphasizing local and artisanal foods in their restaurants. It is my hope that these recipes, some of which are provided by these Chicago area chefs, will encourage the public to expand their palates to include a wider variety of foods in their diets and share their comments with one another.
